Growing up in Calabria, it was essential that with every meal I had fresh chili on the side. Sometimes more than bread! U’ peperuncino ( or u cancarrieddu ), the chili has an important role in the Calabrese diet.
Peperoncino, Nudilla, Nduja and other spicy Clabrese food.
The Calabrese chili is not as hot like other varieties such as the Habanero or the Trinidad Scorpion. That characteristic makes it an important ingredient in every meal. It amplifies the other elements without covering them.
Il peperoncino has many benefits. It helps fighting sinus congestion, aiding digestion and helping to relieve migraines and muscle, joint and nerve pain. It’s also a good source of vitamins A and E, beta-carotene, folic acid and potassium.
Oh, and don’t forget about “the love-effects”. They say it works as Viagra, but much better! Only Calabresi do the mambo like crazy! You know what I mean!
Nudilla: hot spicy whitebait
When you are at the Queen Victoria Market and they have the whitebait at $14.99 instead of $18.99 per kg and, you know that your good friend Nick, an Australian with Calabrese background loves them, especially in the Nudilla spicy version. Buy at least a kilo.
Then you will need:
– 24 gr of salt, we bought a pink salt from Vic Market;
– 50 gr of chili powder, hot & sweet:
– fennel seeds;
– e.v.o. oil;
First of all put the whitebait in a strainer and place it in a bowl. Spread the salt on the fish and mix together.
Live it for 12 hours in the fridge. Don’t wait in front of it. Go out. Meet someone. Have fun. Invite him or her for dinner.
After 12 hours spread the chili powder and the fennel seeds on the whitebait and mix.
Leave it in the fridge for other 12 hours. What are you doing there? C’mon. Move. Again, go out!
Put the fish in sterilized jars and fill them with e.v.o. oil. Leave them open for a couple of hours. Now they are ready to be consumed: with pasta, on bread, or using a piece of red onion as scoop!
